North Jutland creations – culinary experiences at the top of Denmark

Having been named European Region of Gastronomy 2017, Aarhus is attracting all the attention on the Jutland gastro scene. But North Jutland is also serving up high-standard cuisine, with several gourmet restaurants that are well worth a visit.

Plodding through cheap pork, buffet restaurants, and unimaginative café menus in North Jutland is a thing of the past. The young and ambitious chefs here have chosen a different path and in just a few years have created a new restaurant scene that takes pride in craftsmanship and focuses on regional ingredients, such as lobster, oysters, mussels, and fish fresh from the sea. Modern French cuisine meets New Nordic trends and the results are impressive, surprising, and extremely delicious.

Here’s our pick of the best places to eat in North Jutland:


Aalborg’s new top restaurant, run by Michael “Miv” Petersen, who took first place in the Danish Championship for professional chefs in 2013. At Tabu, which he took over in September 2016, he wants to create cuisine that focuses on local niche ingredients, and the results are incredibly delicious – even just his snacks and bread baked using Öland wheat from the Aurion mill are practically divine.

Rusk is a charming little acquaintance, where French brasserie cuisine is “shaken up” with a Nordic touch and as far as possible prepared using sustainable North Jutland ingredients. They still have all the classics of French cuisine, whether it’s oysters, fish soup, tartare, or boeuf béarnaise.

Mortens Kro

Morten Nielsen was Danish Chef of the Year in 1996 and has been creating French-Nordic cuisine at his gourmet restaurant in Aalborg ever since. The restaurant has three stars in Danish food guide Den Danske Spiseguide, and it’s no secret that they will be looking for stars when the Michelin Guide comes to North Jutland. Mortens Kro is also famous for its impressive collection of Dom Pérignon.

La Locanda dei Liberati

It’s not often you come across quality Italian food in these parts, but at Italian Carlo Liberati’s restaurant you’re in the very best hands. La Locanda has recently been named this year’s most authentic Italian restaurant in Den Danske Spiseguide and is recommended in the White Guide.

Musikkens Spisehus

The restaurant at Musikkens Hus on Aalborg’s waterfront offers views across Limfjord and culinary expertise on the plate, both at lunch and dinner. Modern French meets modern Nordic and local ingredients from Limfjord such as edible crab, Norway lobster, and oysters are given a chance to shine in the seasonal menu. For a top-quality weekend brunch, this is the place to come.

Mads Hyllested has plied his trade at such illustrious places as Umami, Søllerød Kro, and Kong Hans, and now this young chef has created one of the city’s trendiest new restaurants in Applaus, offering gourmet experiences and fine dining as well as social dining at very reasonable prices.

This genuine five-star seaside hotel in Gammel Skagen at the very top of Denmark has both a French brasserie and a gourmet restaurant, where head chef Dennis Juhl conjures up sublime delicacies from local ingredients. The service, wine, and ambiance match the quality of the food, and stardust is predicted when the Michelin Guide next comes this way.

Brøndums Hotel

Stellar French chef Michel Michaud is one of the grand old men of Danish gastronomy and has been head chef at Falsled Kro, Kong Hans Kælder, Søllerød Kro, Marie Louise, Ruths Hotel, and Molskroen. He’s now head chef at the renowned Brøndums Hotel in Skagen and serves top-quality classic French cuisine – with an unbeatable wine list.
